EGGS AVOCADO 🥑 I’m not sure why I stopped eating eggs but I ate eggs almost everyday when I first started cutting carbs! No, eggs aren’t required but you can make them so many different ways!

Eggs are the cauliflower of proteins 🤣🤣 And the fact that you can get a carton of eggs and a head of cauliflower for less than 5 bucks doesn’t hurt the ol keto food budget either ☺️

So full disclosure – I ordered this at @famous_toastery_ws but it would be easy enough to recreate at home. It’s one of the reasons I enjoy low carb living – you can almost always order something tasty without having to eat yet another – 🙄 salad with grilled chicken and vinaigrette. But you do you.

This is just eggs baked in a split avocado, topped with melty cheese and a tiny bit of fresh pico de Gallo.

I think the side that came with this on the menu was potatoes and so I just asked for berries instead. I used to wait tables and I can promise you that if you ask ~nicely~ for whatever modifications you need they don’t mind making them. I ask for swaps all the time, but I’m also polite and I tip well so…. everybody wins 😜
