
LOW CARB CHICKEN ENCHILADAS I love Mexican food & I also love simple – anyone else?!
This recipe was so easy it doesn’t even really qualify as a recipe – but sometimes that’s exactly what you need.
LOW CARB ENCHILADAS
I boiled my chicken, did two packs of cream cheese, two cans of rotel (mild), wrapped in the extreme tortillas with 5 net carbs, poured heavy whipping cream over that and sprinkled with cheese. Baked at 375 for about 30 minutes or so. That was for six servings
