Scott and I loved these little peanut butter cookies! I tried to make the criss cross marks on top but this cookie dough was too sticky. Looks aside, these peanut butter cookie bites are a great low carb, keto, and gluten free treat.
1/2 coconut flour (I like this one this one)
1 cup zero carb sweetener (my favorite)
1 cup smooth peanut butter (the kind that is just peanuts and salt)
1/4 teaspoon salt
1 teaspoon vanilla extract
Preheat over to 350 degrees. Line a baking sheet with parchment paper.
In a large bowl, combine the coconut flour, sweetener, peanut butter, eggs, salt and vanilla extract. Mix until thoroughly combined.
By the tablespoon, roll the dough into portions and arrange on the baking sheet. Bake for 15 to 17 minutes until the edges are golden brown. Transfer to a rack and let cool before serving.
