Click HERE for my family’s FAVORITE keto dinner recipe!! Olive Garden is one of the few places that we can all agree on and this keto copycat version of their Zuppa Toscana is definite thumbs up!
Ingredients:
1 lb sweet italian sausage, ground
1 tablespoon butter
1 onion chopped
2 cloves garlic, chopped
1 teaspoon dried oregano
4 cups reduced sodium chicken broth
1 cup heavy whipping cream
1 bag frozen cauliflower rice (about 2 cups)
3 cups chopped kale
salt and pepper to taste
Directions:
In a large pot over medium-high heat cook the sausage until browned. Transfer the cooked meat to a plate. In the same pot melt butter over medium heat. Add onion, garlic, oregano and cook for 2-3 minutes or until onion is translucent. Add the broth and heavy cream. Scrap any browned bits from the bottom of the pan and increase heat to medium high. When the soup reaches a simmer, add the cauliflower, kale and cooked sausage. Reduce the heat to medium low and simmer for ten minutes. Season to taste with salt and pepper.
